I have an infant at home, so I’m all about the quick and simple breakfasts. But, I’ve been in a bit of a smoothie rut lately, making the same green smoothie all the time. I love it, but sometimes I just want to mix up the flavors a bit. So, I created this Pina Colada Smoothe Bowl that I’d like to share with you today.

Summer cocktails like pina coladas can be a lot of fun, but they’re also often full of empty calories. I had some frozen pineapple hanging out in my freezer, so I decided to toss it into the blender with some shredded coconut and coconut milk to make a delicious, nutritious smoothie.
I also added in some white chia seeds for extra omega-3s. White chia seeds are new to me. I’ve been using black chia seeds for years, but I was excited to get to experiment with the white seeds. They have a slightly milder flavor, which I’ve been digging. That milder flavor was perfect for this recipe. (Plus, it doesn’t hurt that they look pretty in the smoothie bowl, too. 😉 )

I also used NOW Foods’ Unsweetened, Shredded Organic Coconut in this recipe. A lot of shredded coconut that you’ll find in the store has been sweetened with some sort of added sugar, which I don’t love. What I do love is that the only ingredient in the NOW Foods version is organic dried coconut. I don’t worry about fueling my body with that.

- 2 c Frozen Pineapple Chunks
- 1/4 c NOW Foods Unsweetened, Shredded Organic Coconut
- 3/4 c Coconut Milk
- 1 scoop NOW Foods Plant Protein Complex
- 2 tbsp NOW Foods White Chia Seeds
- Blend all ingredients together.
- Serve in a bowl.
- Optional: top with additional shredded coconut and chia seeds
